Cooking Social - Tamales & Tequila
Tuesday December 17th - lets work together to make all kinds of Tamales (corn dumplings stuffed with chicken, pork, mushrooms, mole or beans) steamed in corn husks or banana leaves and enjoyed with salsas and pickles. Enjoy a laneway margarita and make a sweet dessert tamale also.
What you can expect -
Welcome - arrive to enjoy a welcome margarita, meet your class mates, receive your recipes and go over the menu and class plan, before jumping into our hands on lesson making and creating a delicious menu.
What we will make -
we work together to prepare the corn dough tamale mixture, and preparing both corn husks and banana leaves so we can make both central mexican & oaxacan tamales. we will explore different fillings to stuff the tamales - mole(chicken), cochinita pibil (pork), flor de calabaza (zuchinni flowers) as well as a sweet pineapple tamale.
while the tamales are staming in their carefully folded parcels, we will make the pickles and salsas to enjoy them with.
yours to take home will be your Clay Cantina class recipes and there is option to purchase some of the clay cooking tools like the ones used during the class.
