Mothers' day masterclass - 5hr

In this class .. we work together to make an epic Mothers day feast 

What you can expect - 

Welcome - arrive to enjoy a refreshing agua fresca, meet your class mates, receive your recipe book and go over the menu and class plan, before jumping into our hands on lesson making and creating a delicious menu.

The Cuisine of Mexico is UNESCO world heritage listed. They use a range of processes and ingredients to prepare these dishes. during the class we will pause to focus on some of these - Ie learning to flame, roast, soak a range of chiles to bring out alternative flavours.. or using Clay Mortar and Pestles (Molcajete) to prepare earthy marinades and salsas. 

What we will make - 

Starters: prepare classic guacamole in the clay molcajete (mortar and pestle) to enjoy with tortilla chips

Soup: learn to make a vibrant mexican classic; Tortilla soup a tomato based broth served with a range of ‘drop in’ finishes like queso oaxaca, chile, chicken, crunchy tortilla strips 

Enchiladas: learn to prepare both rojo, verde & frijol style of enchilada the true Mexican way …

  • Verde: a green tomatillo based sauce, with tortillas stuffed with chicken 

  • Rojo: a red achiote based sauce, with tortillas stuffed with pork 

  • Frijol: a black bean sauce, with tortillas stuffed with cheese (vegetarian) 

Classic Margaritas! lets mix these together to enjoy together when we dine.

You will observe the making of a Traditional flan too to be enjoyed when we dine. 

We stop mid way through the class to enjoy the soup and snacks that you have prepared, and finish the session by sitting together to enjoy the main meal and the traditional dessert

Yours to take home will be your Clay Cantina recipe book and there is option to purchase some of the clay cooking tools like the ones used during the class.
