In this 5 hour masterclass - we learn the learn to make a full menu of home style dishes enjoyed by families of Mexico City daily.
what you can expect -
Welcome - arrive to enjoy a refreshing agua fresca, meet your class mates, receive your recipe book and go over the menu and class plan, before jumping into our hands on lesson making and creating a delicious menu.
The cuisine of Mexico is UNESCO world heritage listed. They use a range of processes and ingredients to prepare these dishes. during the class we will pause to focus on some of these - Ie learning to flame, roast, soak a range of chiles to bring out alternative flavours.. or using clay mortar and mestles (Molcajete) to prepare earthy marinades and salsas.
What we will make -
Starters: prepare classic guacamole in the clay molcajete (mortar and pestle) plus 2 fresh salsas to enjoy with tortilla chips
Soup: vibrant tortilla soup with all of the accompaniments that are added in while enjoying the soup.
Tacos: learn to make corn tortillas by hand and prepare 2 different taco fillings i.e.
Al pastor - slow braised pork with a pine apple & chilli marinade
Tinga de pollo - chicken in tomato, onion & chipotle finished with mexican chorizo sausage
Rajas con crema - green chiles in homestyle cream corn
We stop mid way through the class to enjoy the soup and snacks that you have prepared, and finish the session by sitting together to enjoy the main meal and a traditional dessert.
Yours to take home will be your Clay Cantina recipe book and there is option to purchase some of the clay cooking tools like the ones used during the class.
