What is Mole? (pron. Mo-Lay)
Moles - typical mexican sauces made with a combination of chiles, spices, seeds and nuts.
They are mostly prepared for festive occasions by the entire family, and while the most commonly known is definately the Mole Poblano, which although a complex savoury flavoured sauce, contains dark chocolate too.
The various Moles of Mexico are so many, each region and town having a specialty thanks to the exceptional diversity of ingredients.
In this masterclass we explore the tradition of making real traditional Moles from scratch.

Do a Mezcal tasting or mix a Mezcal based cocktail to enjoy during your class.
What will we make?
Two types of traditional Mole:
The Infamous Mole Poblano made with many spices, seeds, fruits and a hint of dark chocolate.
plus - either Mole Amarillo (yellow) or Verde (green) for a lighter contrasting example of Mole
(both are served with chicken or hearty root vegetables)

What to expect?
A mix of hands on cooking and some demonstrations
Arrive and enjoy a refreshing agua fresca, meet your classmates, receive your recipes and go over the menu, then jump into creating a delicious meal.
We will use a range of traditional processes and ingredients to prepare the dishes.
Learn to flame, roast and soak a range of chiles to bring out beautiful flavours.
Use clay mortar and pestles (molcajete) to prepare earthy marinades and salsas.
In the middle of the session we stop and have a break to enjoy a mescal tasting or mixed cocktail and the snacks we prepared.
Finish the session by having a family style meal together with all the food we have made accompanied
