Let’s mix a margarita and explore traditional ‘Antojitos’ (snacks and appetisers) in this afternoon class
What will we make?
Classic guacamole - to enjoy with fresh tortilla chips
Two traditional table salsas
A Margarita to enjoy with our Antojitos
Antojitos
● Sopes - made from corn masa, Sopes are a delicious soft and crunchy base covered in beans, fresh cheese and other toppings
● Tostadas - the crunchy taco we will enjoy with ceviche
● Tlayudas - extra large tortillas covered in mexican chorizo, refried blackbeans, oaxacan cheese and fresh salsas
● Quesadillas - made with blue corn masa and filled with Oaxacan cheese and a variety of traditional fillings
What to expect?
A mix of hands on cooking and some demonstrations
Arrive and enjoy a refreshing agua fresca, meet your classmates, receive your recipes and go over the menu, then jump into creating a delicious meal.
We will use a range of traditional processes and ingredients to prepare the dishes.
Learn to flame, roast and soak a range of chiles to bring out beautiful flavours.
Leant to work with both blue and white corn masa flour to create a variety of different tortilla variants.
Use clay mortar and pestles (molcajete) to prepare salsas.
In the middle of the session we stop and have a break to enjoy refreshments and snacks we prepared.
Finish the session by having a family style meal together with all the food we have made.
